Don Fulano Añejo Tequila begins with mature Blue Weber agave grown in the Highlands of Jalisco. Don Fulano carefully selects mature Maduro and Pinto agaves from the family's orchards, emphasizing maturity as one of the most important factors in the quality and character of the finished tequila.
After harvest, the agave piñas are slowly steamed at low pressure and allowed to rest before extraction. Fermentation takes place in open tanks, with portions fermented alongside the agave fibers to help develop additional complexity.
Don Fulano combines two distillation methods. Approximately 80–85% of the final blend comes from double distillation in copper alembic stills, creating a rich and deeply flavored spirit. The remaining portion comes from a low-proof distillation in a double-column copper Coffey still, contributing elegance and balance.
For the Añejo expression, mature tequilas are blended after aging in French Limousin and Nevers oak casks previously used for wines from Burgundy and the Loire Valley.
