The region's semi-arid climate and mineral-rich soils contribute significantly to Emigdio Jarquín's distinctive mezcal profile.
After harvesting, the agave piñas are roasted in a traditional conical earthen oven for approximately 5–7 days and then allowed to cool before milling. The cooked agave is crushed using Emigdio's massive 4,000-pound stone tahona, then transferred with its fibers into wooden fermentation vats for natural fermentation.
Distillation takes place primarily in small copper stills, with two distillations used to concentrate the spirit while preserving its characteristic agave, mineral, and fruit-driven profile.
