Process & Aging

Baby Jane is built around Widow Jane's proprietary Baby Jane heirloom corn, a unique corn varietal developed specifically to create greater depth, sweetness, and creamy spice in the finished whiskey.

After harvesting, the corn is mashed, fermented, and distilled before the whiskey is placed into new charred American oak barrels for maturation. Baby Jane incorporates whiskey distilled by Widow Jane in Red Hook, Brooklyn, as well as Kentucky, before being hand-assembled in Brooklyn in small batches of only a few barrels at a time.

The finished bourbon is non-chill filtered and proofed to 91 proof (45.5% ABV) using Widow Jane's signature mineral water sourced from the legendary Rosendale Mines of New York.
